Many studies have proved that honey bees have therapeutic benefits due to the presence of bioactive chemicals like phenolic compounds and their antioxidant activity. However, little is known about Indonesian bee honey. The current study studied the phytochemical screening, physicochemical properties, and antioxidant activity of six varieties of stingless bee honey and three of sting bee honey, each species collected from two regions in Indonesia. The physicochemical analyses included colour, pH, moisture, total soluble solids, Brix, total phenolic content, total flavonoid content, and total alkaloid content. The results showed a significant difference in Indonesian bee honey`s phytochemical compounds and antioxidant activity depending on species and geographical regions. The highest phytochemical and antioxidant activity were found in Apis cerana honey from Sumatra Utara. The antioxidant activity of Indonesian bee honey during storage was analysed. The antioxidant activity of bee honey increased in samples (H3, H4, H8, and H13) after storage for 30 days. This rise continued even after storage for 45 days by (10.6%, 3%, 11.8%, and 5.6%), respectively at 30 days and by (31.8%, 30%, 21.9%, and 10.3%) respectively at 45 days. The antioxidant activity of bee honey was reduced in some samples after 30 days of storage but increased again after 45 days. There was a significant difference in the antioxidant activity of Indonesian bee honey after storage. Concerning correlation, the (r) shows a strong correlation between the phytochemical compounds of Indonesian bee honey and antioxidant activity, where the higher antioxidant activity was found in the samples containing high values of phenolic, flavonoid, and alkaloid.
